Arancini "Gooty"

- For about 22/23 arancini

- 500g rice

- Onion (as required)

- Extra virgin olive oil (as required)

- Black pepper (as required)

- Vegetable broth

- Salt (as required)

- 1 egg

- 1g of saffron

- 30g parmesan

- 100g of ham cubes

- 100g of melted cheese or mozzarella

- breadcrumbs


In a pan fry a tablespoon of extra virgin olive oil with onion.

Toast the rice and cook it adding the vegetable broth. Before you finish cooking dissolve the saffron in a ladle full of broth and add to the rice then add the salt.

When cooked, let rice stand until cool.

Add  Parmesan , pepper and egg.

Mix everything, then with the hands slightly wet,form the arancini adding a cube of ham and cheese or mozzarella in the center.

Roll the arancini in breadcrumbs and fry in hot oil.

Serve warm... taste them!
